4 Sirloin steak (à 100 grams)
400 grams Asian Egg noodle (Hokkien)
300 grams Bok Choy
2 Red chili peppers
2 tsps finely chopped Coriander
salt

2 garlic cloves (finely chopped)
1 pc ginger (3 cm, grated)
2 Tbsps bright soy sauce
2 Tbsps Sake

Preparation steps

Rinse chilies, halve lengthwise, remove seeds and cut into thin strips. Rinse the bok choy and soak in plenty of salted water for about 5 minutes. Blanch the bok choy in a pot of boiling salted water. Drain well. Cook the egg noodles according to package driections, drain.

Heat 1 tablespoon of oil in a nonstick skillet and saute the steaks until browned on both sides, about 3 minutes. Wrap in aluminum foil and keep warm. Reduce the heat. Stir 2 tablespoons sake and 2 tablespoons water into the pan with the drippings. Add soy sauce, ginger and garlic and simmer for 1 minute. Season with salt. Cut the meat into very thin strips and add any juices to the pan. Add the noodles, meat and bok choyi to the pan and mix everything well. Stir in the cilantro and chile and season to taste with salt and serve immediately.

At choice can be the steak in a grill pan fry without fat. Then heated Sake and water together with the soy sauce, ginger and garlic, it can be about 1 minute simmer and then add the beaten during meat cutting gravy and 1 tablespoon sesame oil.
