Rice Noodles with Bok Choy
Peel and finely chop garlic and shallots. Rinse bok choy and spin dry. Cut stems into fine strips and cut leaves into wide strips. Heat oil in a medium saucepan, sauté garlic, shallots and bok choy stems for a little and add broth. Cook for 5 minutes. Add bok choy leaves and bring to a boil again. Season with fish sauce.
Put noodles in warm water for 30 minutes. Drain and cook in plenty of water according to package instructions. Combine with bok choy. Transfer to plates, drizzle with lime juice and serve, garnished with lime wedges, immediately.
