Preparation steps

Rinse and spin dry the arugula. Peel and chop the garlic. Rinse the tarragon, shake dry and the pluck the leaves. Reserve 4 tarragon sprigs for garnish. Finely grate the Parmesan. Purée the arugula, garlic, tarragon leaves and olive oil in a blender. Stir in the Parmesan. Season with salt and pepper.

Cook the tagliatelle according to package directions in plenty of boiling salted water until al dente.

Rinse the chicken breasts, pat dry and cut in half horizontally. Put the flour in a deep plate. Beat the eggs. Put the sesame seeds in a deep plate. Season the chicken slices with salt and pepper and coat with flour, then dip in the beaten egg and roll in sesame seeds. Press lightly to stick the sesame seeds to the chicken. Heat the oil in a wide pan and fry the chicken over medium heat for 7-9 minutes, turning once.

Drain the noodles. Serve on plates with the sesame chicken and herb sauce. Garnish with the remaining tarragon.
