This recipe is higher in sugar and fat, but it is a great treat to make for dessert, and the nectarines are a good source of vitamin A, vitamin C, and potassium. These nutrients can help improve metabolism, digestion, and heart health. 

For a lower fat and calorie variation, use whipped cream or yogurt instead of vanilla ice cream. 

Ingredients

For the pastry
1 ½ cups all-purpose flour (plus extra for dusting)
cup unsalted butter
1 Tbsp sugar
¼ tsp salt
Iced water
For the filling
¾ cup Marzipan
¼ cup sugar (plus extra for sprinkling)
½ cup all-purpose flour
4 Tbsps butter
2 large eggs
Almond extract
3 firm Nectarine (sliced)
To serve
powdered sugar
Vanilla ice cream

Preparation steps

1.
For the pastry: put the flour in a mixing bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and salt and just enough water to form a dough.

Roll out the dough on a lightly floured surface into a 12" round and place on a baking tray lined with non-stick baking paper. Chill for 20 minutes.

Heat the oven to 425F.

For the filling: blend the marzipan and sugar in a food processor processor until finely ground. Add the flour and butter and blend to a thick paste.

Add the eggs and almond extract and blend until smooth. Spread the filling on the dough, leaving a 2" border around the edge.

Arrange the nectarine slices on top. Fold in the edges of the dough.

Lightly sprinkle sugar over the fruit and edges of the dough.

Bake for about 50 minutes, until the crust is golden brown and the fruit is tender. Cover the crust edges with foil for the last 10 minutes if browning too quickly.
9.
Sift a little icing sugar over the top and serve warm with vanilla ice cream.
