- 1 bunch scallions
- 1 red Bell pepper
- 1 onion (chopped)
- 1 garlic clove (chopped)
- 1 Tbsp freshly grated ginger
- 4 Tbsps vegetable oil
- 1 Tbsp ground Turmeric
- salt
- cayenne pepper

Preparation steps
1.
Rinse and dry scallions. Cut green to dark green parts into very fine strips. Put into cold water to preserve color. Cut remaining parts into about 4 cm (approximately 1.5 inch) long pieces.

Bring rice with turmeric and almost twice the amount of lightly salted water to a boil. Simmer, covered, on very low heat for about 25 minutes.

Rinse and dry bell pepper, halve, remove seeds and ribs, cut into small cubes.

Heat oil in a wok or deep frying pan and brown meat. Add onion, garlic, pepper, scallions, turmeric and ginger. Saute everything for 2 minutes on high heat. Add rice and mix well, saute for about 1 minute. Season with salt and cayenne pepper, arrange on plates and serve garnished with scallion rings.
