28 ozs small new Potato (scrubbed and halved)
4 pcs Salmon fillet
3 Tbsps olive oil
4 Tbsps
3 Tbsps white wine
2 Zucchini (cut into batons)

1 Roasting pan, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Peeler, 1 Aluminum foil

Preparation steps

Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

Place the potatoes in a large pan of salted water and boil until nearly tender.
3.
Meanwhile, rub the salmon pieces with a little olive oil and place skin side down in a greased roasting pan. Spoon about 1 teaspoon of the fruit mustard onto each piece of fish, pour the wine into the pan, cover with tin foil and place in the oven for about 15 minutes or until the fish is just cooked through.
4.
When the potatoes are nearly cooked, add the courgettes and boil until they are tender. Drain well and mix in the remaining olive oil. Season with salt and pepper.
5.
Serve the fish on a bed of the vegetables, spoon over the remaining fruit mustard and serve.
