1 side Salmon (boned, with skin)
Sea salt
2 Tbsps Lemon oil
For the sauce
1 cup medium-dry white wine
3 Tbsps medium-hot Mustard
1 generous pinch Vanilla bean
sauce thickener (as necessary)
¼ cup butter
Orange juice (to flavour)
2 Tbsps cream (to garnish)
Watercress (to garnish)

Preparation steps

Rinse the salmon, pat dry and brush on all sides with lemon oil. Sprinkle with a little sea salt and cut into pieces or leave whole as you prefer. Place on a hot barbecue, skin side down, and grill for 15-20 minutes (individual pieces will only need 8-12 minutes). After 5 minutes move to the edge of the barbecue where it is not so hot and cook until done.

For the sauce heat the wine in a pan with the vanilla seeds. Boil until reduced by about 1/3 then add the mustard and thicken with a little sauce thickener. Beat in the butter in small pieces and add orange juice to taste. Spoon a little of the sauce on to warmed plates and decorate with cream. Cut the grilled salmon into portions and place on the sauce (or place the grilled salmon portions on the sauce) and serve garnished with watercress.
