4 kilograms mussels
3 white onions
3 carrots
½ Leek
extra virgin olive oil
½ bunch flat leaf parsley
250 milliliters dry white wine
salt
freshly ground peppers

Preparation steps

1.

Debeard the mussels, and rinse under cold running water. Discard any mussels that are open.

Peel and finely chop the onions. Peel the carrots. Rinse and trim the leeks. Dice the carrots and leeks into small pieces. Rinse and dry the parsley, and finely chop.

Heat 3 tablespoons of oil in a large pot. Sauté the onions, then add the remaining vegetables. Add 250 ml (approximately 8 ounces) of water and the wine, then bring to a boil. Season to taste with salt and pepper. Add the mussels, cover, and cook 10-15 minutes over high heat stirring occasionally. Stir in the parsley. Remove the mussels from the pot, discarding any mussels that haven't opened. Serve the mussels with fresh white bread.
