- 18 cups fresh mussels
- 2 cups dry white wine
- 2 cloves garlic cloves (pressed or minced)
- 2 shallots (finely chopped)
- ¼ cup freshly chopped parsley (finely chopped)
- 2 sprigs fresh thyme (chopped)
- salt (to taste)
- crusty Bread to serve (optional)

Preparation steps
1.
Rinse and scrub mussels under cold running water. Remove beards using your fingers or a paring knife; discard any cracked, crushed or open mussels..

In a large stockpot combine wine, garlic, shallots and herbs, simmer over medium heat for approximately 2 to 3 minutes.

Add mussels, cover the pot and simmer for 3-4 minutes. Stir to coat with wine and herb mixture and cook until the shells open (about 8 minutes). Do not over cook. Remove from heat.

Transfer mussels to a serving platter or four shallow serving bowls using a slotted spoon, discard any mussels that did not open. Strain the broth, add salt if necessary and pour over mussels.
5.
Serve with crusty bread.
