- 500 grams mixed Mushrooms (such as oyster mushrooms, Rotkappen, porcini mushrooms, button mushrooms, shiitake)
- 2 garlic cloves
- 30 grams butter
- 250 milliliters Whipped cream
- 1 Tbsp Crème fraiche
- 2 Tbsps parsley (chopped)
- salt
- freshly ground peppers
- Nutmeg (freshly grated)
- 8 slices Toast
- olive oil
Preparation steps
1.
Clean the mushrooms. Leave whole or slice, depending on their size.
2.
Heat the butter in a pan.
3.
Add some of the mushrooms to the pan, and sauté.
4.
Add the remaining mushrooms to the pan, and sauté until folden brown. Don't stir too frequently, or the mushrooms will release too much liquid.
5.
Peel and finely chop the garlic. Add to the mushrooms, then season to taste with nutmeg and pepper.
6.
Add the cream, and simmer lightly. Add the creme fraiche, and season to taste with salt.
7.
Toast the white bread in a grill pan.
8.
Place the mushrooms on plates, and garnish with the parsley. Add the toast the the plates, and serve immediately.
