32 medium button Mushroom
2 garlic cloves
1 Tbsp finely chopped ginger
1 Tbsp finely chopped Lemongrass
3 Tbsps soy sauce
3 Tbsps sesame oil
vegetable oil
1 red chili pepper
1 garlic clove
6 Tbsps Peanut butter (chunky)
2 Tbsps Lime juice
6 Tbsps soy sauce
4 Tbsps sesame oil
200 milliliters Coconut milk
8 Wooden skewers
2 chopped scallions
1 Tbsp roasted Peanuts

Preparation steps

Rinse mushrooms, cut off the stems, and place in a bowl. Peel and finely chop the garlic, and mix with ginger, lemongrass, soy sauce and sesame oil. Mix with the mushrooms. Marinate for 4 hours, stirring frequently.

For the sauce, rinse, dry, halve and remove the seeds from the chile pepper and chop very finely. Peel garlic and chop finely. Warm the pepper, garlic, peanut butter, lime juice, soy sauce and sesame oil. Add the coconut milk. Stir and season the sauce until smooth. 

Remove the mushrooms from the marinade and place 4 mushrooms on each skewer. Place the skewers on the grill until golden brown, occasionally brushing with the marinade. (Alternatively, one could also heat oil in a pan and fry the mushroom skewers until golden brown, brushing with the marinade.)

Garnish with chopped green onions and peanuts. Serve the finished skewers with the sauce.
