100 grams Sea buckthorn
600 grams mixed Mushrooms (such as button mushrooms, porcini, chanterelles)
1 onion
1 garlic clove
2 Tbsps olive oil
2 bay leaves
1 tsp freshly chopped thyme
½ tsp freshly chopped rosemary
150 milliliters Vegetable broth
1 Tbsp White vinegar
salt
freshly ground peppers
1 Tbsp sugar

Preparation steps

Rinse the sea buckthorn berries, and drain well.

Clean the mushrooms, and finely chop. Peel and finely chop the onion and garlic. Sweat in the olive oil with the spices. Add the mushrooms and sea buckthorn berries, and sauté briefly. Deglaze with the broth, and season to taste with salt and pepper. Simmer gently over medium heat for 15-20 minutes. Season to taste with the vinegar, salt, pepper, and a pinch of sugar. Serve warm.
