- 6 Filo dough
- 2 Tbsps Crème fraiche
- 100 grams Processed cheese
- 50 grams Quark
- 80 grams button Mushroom
- 1 Tbsp butter
- 1 tsp Harissa
- 2 Tbsps parsley (chopped)
- salt
- peppers
- egg yolks (for brushing)
- vegetable oil (for frying)

Preparation steps

For the filling, trim the mushrooms and finely chop. Heat butter in a pan and saute the mushrooms in it until all the liquid evaporates. Remove from the heat and transfer the sauteed mushrooms to a bowl. Mix in the processed cheese, creme fraiche, harissa and parsley, and mix until smooth with a fork. Season with salt and pepper.

Cut the filo dough sheets diagonally into quarters so that 4 triangles arise. Divide the filling equally over each dough triangle. Fold the lateral corners over the filling and roll up to the tip. Brush the rolls with the egg yolk. Fry the rolls in hot oil for about 1-2 minutes, until golden brown. Drain the fried rolls on absorbent paper and serve.
