Molded Cheese with Fruit and Almonds
Ingredients
- For the cheese
- 750 grams Quark (10% fat)
- 100 grams butter (softened)
- 75 grams sugar
- 1 packet Vanilla sugar
- 1 egg
- 125 grams Double cream
- 75 grams almonds (chopped)
- 2 Tbsps raisins (chopped)
- 75 grams candied Fruit (chopped)
- For decorating
- 1 Tbsp Almond slivers (roasted)
- 2 Tbsps Orange peel (candied)
- 2 Oranges (candied)
Preparation steps
Place quark in a cheesecloth and squeeze excess liquid and drain in a colander. Mix butter with sugar, vanilla sugar and egg until very foamy and stir together with quark until smooth.
Place a round sieve in a bowl and line sieve with cheesecloth. Place 2 tablespoon cream in a small dish and brush cloth with a thin layer of cream.
Mix remaining cream, candied fruit, almonds and raisins and add to quark mixture and stir until smooth. Pour mixture into cheesecloth-lined sieve and fold ends of cloth over. Place a plate over cheesecloth and place a weight, about 450 g (approximately 16 ounces), on plate to press out excess liquid. Refrigerate for about 24 hours and allow remaining liquid to drain. Fold back cheesecloth and invert cheese onto serving plate and carefully remove cheesecloth. To serve, garnish with toasted almonds, orange zest and orange slices.
