120 grams ground almonds
20 grams Coffee powder
½ Vanilla bean (scraped for seeds)
1 egg
1 egg yolk
150 grams white chocolate
120 grams Mascarpone (Room temperature)
1 generous pinch ground cloves

Preparation steps

Mix together the powdered sugar, butter, hazelnuts, almonds, instant coffee and vanilla seeds in a mixing bowl. Add the egg and yolk and mix until smooth. Cover with plastic wrap and refrigerate for 30 minutes. Preheat the oven to 180°C (approximately 350°F). Roll out the dough on a work surface lightly dusted with powdered sugar to about 5 mm (approximately 1/4 inch) thick. Cut out little stars. Transfer to cookies to a parchment-lined baking sheet. Roll out the remaining dough and continue to cut out stars.

Bake for about 10 minutes. Remove and let cool on a wire rack. Melt the crushed chocolate over a hot, not boiling water bath. Remove from the heat and stir in the cloves and mascarpone until completely combined. Let cool to a creamy consistency. Top a cookie with a teaspoon of the mascarpone mixture. Top with a second cookie. Let dry and serve dusted with cocoa powder.
