3 Tbsps lemon juice
6 ozs Tomato juice
14 ozs Langoustine
7 ozs shrimp (ready to cook and deveined)
8 ozs Sausage

Preparation steps

Rinse leek and cut into small cubes. Rinse celery and also cut into small cubes. Rinse potatoes and cut into large pieces. Finely chop garlic. Rinse tomatoes and cut into large pieces. Trim corn on the cob and cut into 2 cm (approximately 1 inch) thick pieces.

Melt butter with oil in a large saucepan. Saute leeks, celery and garlic in the saucepan. Then, add lemon zest, thyme and tomato paste and let simmer for a few minutes. Deglaze the pan with fish broth, add lemon juice and tomato juice. Add corn and potatoes and allow to simmer for about 15 minutes. Meanwhile, rinse langoustine, pat dry and coarsely chop. Cut sausage into slices. Add langoustine, shrimp and sausage to the saucepan, simmer for another 5-10 minutes and season with salt and pepper. Serve immediately.
