- ½ Cucumber
- 100 grams Radicchio
- ½ Oak leaf lettuce
- 1 bunch Sorrel
- 150 grams Cherry tomatoes
- 4 slices Toast
- 8 slices Smoked salmon
- 2 Tbsps lemon juice
- salt
- peppers (freshly ground)
- 4 Tbsps olive oil
- Leeks (for garnish)

Preparation steps
1.
Rinse radicchio and oak leaf lettuce, separate into individual leaves and spin dry. Rinse sorrel, remove stems and spin dry. Roll up 10 sorrel leaves and cut crosswise into 1-2 cm (approximately 1/2 to 3/4 inch) wide strips.

Peel cucumber and halve lengthwise. With a vegetable peeler, cut cucumber into thin strips.

Rinse and halve cherry tomatoes.
4.
Toast bread and halve twice diagonally into small triangles.
5.
Roll up salmon slices and cut into 2 cm (approximately 3/4 inch) thick strips.
6.
To make dressing: In a bowl, whisk lemon juice with salt and pepper to taste. Whisk in oil.
7.
Toss salad ingredients with dressing and arrange on plates. Garnish with smoked salmon and chives. Serve with toast triangles.
