- 12 ozs Oranges (peeled and cut into segments)
- 1 ⅓ cups water
- 1 cup white wine vinegar
- 1 cup light brown sugar
- 2 cloves
- 1 Vanilla bean
- 12 ozs Peaches (skinned and quartered)

Preparation steps
1.
Put the orange segments in a pan with the water and bring to a simmer. Simmer very gently until tender. Drain well and reserve the cooking liquid.
2.
Heat the cooking liquid, vinegar, sugar, cloves and vanilla pod until the sugar has dissolved. Bring to a boil and boil rapidly for 5 minutes.

Add the oranges and peaches and simmer very gently until the fruit is tender but still whole.
4.
Spoon the fruit into warm sterilised jars.
5.
Boil the syrup until thickened and syrupy and pour over the fruit with the vanilla pod and cloves. Cover, seal and label. Eat within 3 months.
