- 3 Tbsps butter
- 1 onion (finely chopped)
- 1 stalk Celery (chopped)
- 2 cloves garlic cloves (chopped)
- 16 ozs potatoes (peeled and cut into chunks)
- 16 ozs Celeriac (peeled and cut into chunks)
- ½ tsp cayenne pepper
- 2 cups fish stock
- 2 cups milk
- 21 ozs mixed Fish (cod, salmon, smoked haddock, for example), cut into bite sized chunks
- 4 Tbsps mixed Fresh herbs (parsley, mint, basil), roughly chopped

Preparation steps
1.
Heat the butter in a large pan and gently cook the onion, celery and garlic until soft but not brown.
2.
Add the potatoes, celeriac and cayenne, cook for 2 minutes then add the fish stock and bring to a simmer. Simmer for 10 - 15 minutes or until the vegetables are soft then add the milk.
3.
Blend the mixture in a food processor or with a hand blender then pass through a fine sieve into a clean pan.
4.
Reheat the chowder very gently then add the fish and simmer over a very low heat until the fish is cooked through. Stir in the chopped herbs and season with salt and freshly ground black pepper.
