- 2 Tbsps olive oil
- 1 Tbsp Wine vinegar
- ½ tsp salt
- ¼ tsp freshly ground Black pepper
- 1 clove garlic cloves (crushed)
- 1 large Zucchini (sliced)
- 4 cherry Tomatoes
- 4 button Mushrooms
- 16 ozs skinless, boneless Chicken breasts (cut into 2.5cm|1"" cubes)

- boiled Rice
- Lemon wedge
- Greek yogurt
- oregano

Soak the skewers in cold water for 30 minutes before using, to avoid burning.

1 Measuring cups, 1 Tablespoon, 1 Immersion blender, 1 Cutting board, 1 Small knife, 1 Small plate, 1 deep bowl
Preparation steps

Heat the grill and lightly oil the grill rack.

Whisk together the olive oil, vinegar, garlic, salt, and pepper. Add the vegetables and chicken and toss until well coated.

Thread alternating pieces of chicken, courgettes, mushrooms, and tomatoes on wooden skewers. See note.
4.
Place the skewers on the grill rack and grill about 15cm|6" from the heat for 5-7 minutes. Turn over the skewers and cook for a further 5 minutes, until the chicken is cooked through.
5.
Arrange on a serving plate and serve with boiled rice, lemon wedges and a small bowl of Greek yoghurt garnished with oregano.
