Preparation steps
1.
Cook the soba noodles according to package instructions in boiling salted water. Rinse in cold water and drain. Bring the broth to a boil in a pot and stir in miso. Rinse the chicken breasts, pat dry and cut into very thin slices. Trim the mushrooms and cut into slices. Rinse scallions, trim and cut diagonally into thin rings. Rinse the basil, shake dry and pluck off the leaves. Add the mushrooms and scallions (reserving up to 2 tablespoons for garnish) to the soup along with the chicken and simmer only until done, about 5 minutes. Finally, add the soba noodles and season with soy sauce and fish sauce.
2.
Distribute among bowls and serve garnished with the remaining scallions.
