800 grams Cherry tomatoes
2 centimeters fresh ginger
1 garlic clove
1 Tbsp soybean oil
200 milliliters Rice wine
2 Tbsps soy sauce
1 tsp Palm sugar
½ Lime (juice)
300 grams Soba Noodles
4 scallions (white and light green parts only)

Preparation steps

1.

Blanch tomatoes in boiling water, then rinse, peel and coarsely mash about half. Peel and finely chop ginger and garlic. In a pan, cook ginger and garlic in hot oil until translucent. Deglaze with rice wine. Add soy sauce, sugar, lime juice and all of the tomatoes. Simmer about 10 minutes over low heat, adding additional water if necessary.

Cook pasta according to package instructions.

Rinse, trim and cut scallions crosswise on the diagonal.

Season soup to taste. Drain noodles and divide among bowls. Ladle soup over noodles and serve sprinkled with scallions.
