Preparation steps

In a pot, bring sugar, lemon juice and 400 ml (approximately 1 2/3 cup) water to a boil. Meanwhile, rinse mint. Set 4 small sprigs aside for garnish and cut a few leaves into strips. Remove sugar-syrup from heat and stir in remaining mint. Let stand about 45 minutes. Then strain syrup through a sieve into a shallow metal pan. Freeze at least 3 hours. In the first two hours, vigorously stir mixture with a fork every 30 minutes to prevent large ice crystals from forming.

To serve, scrape granita with a spoon and stir in mint strips. Divide among glasses and garnish with reserved mint sprigs.
