- 125 grams Dark couverture chocolate
- 100 grams Chocolate mint (chocolates)
- 50 grams Mascarpone
- 1 pinch salt
- 2 Tbsps Brandy
- 200 milliliters Whipped cream
- 2 tsps Instant gelatin
- 1 packet Vanilla sugar
- mint (for garnish)
Preparation steps

Coarsely chop the chocolate and set a bit aside for garnish. Combine the rest with mint chocolates and melt in a double boiler or heatproof bowl over a saucepan of simmering water. Add the mascarpone in small portions and mix until well incorporated. Remove from heat and stir in the salt and Brandy. Allow the chocolate mixture to cool slightly.

Beat the whipping cream with the vanilla sugar until stiff, then stir in the instant gelatin. Fold the whipped cream into the slightly cooled chocolate mixture and refrigerate for 1 hour.

Spoon the chocolate cream into dessert bowls and garnish with mint leaves and the reserved chopped chocolate.
