- 2 garlic cloves
- 2 Tbsps butter
- 200 grams Peas (frozen)
- 300 milliliters Vegetable broth
- 1 stem mint
- 100 grams Whipped cream
- white, freshly ground peppers

Preparation steps

Peel and finely dice the shallot and garlic. Heat the butter in a pan, and sauté both. Mix in the peas, sauté briefly, then deglaze with the broth. Simmer the mixture gently for 5 minutes. Rinse the mint and pat dry. Remove the leaves and coarsely chop (minus a few for garnish).

Add the mint to the sauce and puree completely. Pass through a fine strainer and reheat. If the sauce is too thick, thin with some broth. Likewise, if the sauce is too thin, simmer until the desired consistency has been reached. Remove from the heat, let cool, then mix in the sour cream. Season to taste with salt and pepper, garnish with the reserved mint leaves, and serve.
