- For the bases
- 8 cups all-purpose flour
- 2 tsps salt
- 8 tsps Baking powder
- 1 cup butter
- 5 eggs
- 8 Tbsps milk (more if needed)
- For the topping
- 1 cup tomato passata
- 4 ozs ham (chopped)
- 2 large Tomatoes (chopped)
- 8 ozs canned Pineapple (pieces in juice)
- 1 cup grated Mozzarella
- olive oil

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line 3 large baking trays with non-stick baking paper.
2.
For the bases: mix the flour, salt and baking powder in a mixing bowl, then rub in the butter with your fingers, until the mixture resembles breadcrumbs.
3.
Mix the eggs and milk together, then stir into the dry ingredients to make a soft dough. If the mixture is too dry, add a little more milk, if it is too wet add a little more flour.
4.
Divide the dough into 8 and shape each into a round on a lightly floured surface. Place the rounds on the baking trays.
5.
For the topping: spread the pasatta (sieved tomatoes) over each round, then arrange the ham, tomatoes and cheese on top. Add the pineapple.
6.
Drizzle lightly with olive oil and bake for about 15 minutes until the bases are firm and the cheese has melted.
