250 grams Millet
600 milliliters Vegetable broth

1 Tbsp finely chopped oregano

3 Tbsps breadcrumbs

Preparation steps

Preheat the oven to 200°C.

Peel the onion and garlic and chop finely. Blanch the tomatoes, peel, quarter, core and cut into very small cubes. Rinse the chile, cut in half lengthwise, remove seeds and finely chop. In a saucepan heat the oil and sweat the onion with the garlic until translucent. Add the chile and tomato, sauté briefly, stir in the millet and pour in the broth. Let swell about 15 minutes over medium heat. Stir occasionally. Season with salt and pepper, and stir in the oregano. If necessary, add a little broth. The millet should have absorbed all of the liquid at the end.

Then let millet cool a little, add the eggs and breadcrumbs and mix to a moldable material. From the mixture form small balls and then form pancakes.

Place on a baking tray lined with baking paper and bake in preheated oven for about 10 minutes. Remove and serve.
