1 Small skillet, 1 Plate, 1 Small knife, 1 Small pot (mit Deckel), 1 Wooden spoon, 1 Small bowl, 1 Teaspoon, 1 Cutting board
Preparation steps
1.
Put the quinces and water and place in a heavy-based and bring to the boil, then cook gently until the fruit is tender and pink - about 1 1/2 hours. The precise time will depend on the ripeness of the fruit.

Mash to a soft puree and push through a sieve. Weigh the puree and return to the pan with the same weight of sugar. Stir over a low heat until the sugar has dissolved completely, then increase the heat and cook, stirring all the time (to prevent the mixture sticking and burning) until the mixture thickens and leaves the sides of the pan and is dark red in colour.

Heat the oven to its lowest setting.

When the mixture is very thick remove from the heat and spread out 1cm thick onto trays lined with non-stick baking paper. Let it cool slightly, then press it smooth with wet hands.
5.
Place the trays in the oven and leave to dry out for about 12 hours.
6.
Cut into squares with a hot knife and roll in sugar. Pack into an airtight container between layers of non-stick paper and store in a cool dry place.
