These muffins' beautiful appearance make them a great, healthy option for children's birthday parties.
Ingredients
- For the cupcakes
- 1 ¾ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp Baking powder
- 1 pinch salt
- ½ cup unsalted butter
- 1 cup sugar
- 1 large egg
- ½ tsp watermelon flavor oil
- 1 cup Sour cream
- pink Food coloring
- For the frosting
- 3 Tbsps unsalted butter
- ½ tsp watermelon flavor oil
- ½ Tbsp lemon juice
- 1 Tbsp milk
- 3 cups powdered sugar
- To decorate
- green colored sparkling sugar
- 12 pcs Watermelon
Preparation steps
For the cupcakes: heat the oven to 350°F. Place 12-15 paper liners in a muffin tin.
Sift the flour, baking soda, baking powder and salt into a bowl and set aside.
Add the egg and mix well. Stir in the watermelon flavoring.
Add about 1/3 of the flour mixture and beat until just mixed. Add half the sour cream, beating until just mixed. Repeat with the remaining flour mixture and sour cream. Stir in the food coloring as desired.
Spoon into the paper liners and bake for about 20 minutes until fluffy and firm to the touch. Cool in the pan for 5 minutes, then place on a wire rack to cool completely.
Beat the butter until soft. Sift in about 1/3 of the icing sugar. Stir in the milk and beat well until smooth.
