Melon Balls in the Melon
Watermelon is made up of around 92% of water, so each bite of this fruit salad is hydrating and has significant levels of vitamins A, B6 and C, lycopene, antioxidants and amino acids. Plus, this quintessential summer fruit is fat-free, low in sodium and is extremely low in calories. Nothing sounds better than eating this melon salad poolside!
For an added twist, substitute the lemon for lime. Additionally, you can always substitute the honey for agave.
- 1 small Watermelon
- 1 small Cantaloupe
- 5 ozs Raspberries
- 1 lemon (juice)
- 1 Tbsp liquid honey
- mint (for garnish)
Halve the melon with a sharp knife carefully and cut the edges jagged with a knife. From this cut out balls of melon. Core the cantaloupe and also cut out balls.
Brush the raspberries. Combine the melon balls with raspberry, lemon juice and honey, season to taste and let rest for 20 minutes. Put melon balls in the basket and serve garnished with mint.
