1 kilogram Melon such as Cantaloupe (peeled and seeded)
2 organic Oranges
1 organic lemon
500 grams jam sugar (2:1 ratio)
1 sprig Lavender

Preparation steps

1.

Cut the melon into cubes, then place in a pot. Rinse the oranges and the lemon in hot water, then pat dry. Finely grate the zest from the fruit, squeeze the juice, and add the zests and the juices to the melon. 

2.

Add the sugar to the pot, and stir to combine. Coarsely mash the mixture with a potato masher. Add the lavender to a spice bag, add to the pot, and brin to mixture to a boil. 

3.

Cook for 4 minutes, stirring constantly, until the jam begins to thicken. Remove the lavender from the pot, and fill the prepared jars to the brim with the jam. Seal the jars tightly and cool completely.
