1 kilogram little yellow Zucchini
2 red Bell pepper
250 grams shallots
3 garlic cloves
1 tsp ginger (freshly grated)
4 Tbsps raisins
500 milliliters White vinegar
100 grams cane sugar
1 tsp salt
¼ tsp cayenne pepper
¼ tsp allspice
¼ tsp cilantro

Preparation steps

1.

Rinse, dry and finely chop zucchini. Rinse peppers, halve, remove seeds and ribs, chop finely. Peel shallots and garlic and chop finely.

Combine zucchini, peppers, shallots, garlic, ginger and raisins in a pot. Addr vinegar, sugar, season with salt, cayenne pepper and allspice. Add cilantro. Simmer for about 45 minutes on medium heat, stirring occasionally.

3.

Pour relish into prepared preserving jars, seal well. Turn jars upside down and let stand for about 15 minutes. Return jars to normal position and cool completely.

4.

Let relish rest for four days before serving.
