- 2 Fennel bulb (rinsed, halved, core removed and chopped into strips)
- 2 red peppers (rinsed, halved, deseeded, membrane removed and chopped into large pieces)
- 4 Red onions (peeled and chopped into segments)
- 1 Leek (rinsed, cleaned and chopped into thick rings)
- 4 Tbsps olive oil
- 1 sprig rosemary (leaves plucked)

Preparation steps
1.
Heat the oven to 200°C conventional / 180°C fan assisted / 400°F / gas 6.
2.
Place all vegetables in an ovenproof dish and drizzle with olive oil.
3.
Scatter with rosemary, season with salt and pepper and bake in the oven for around 30 minutes, occasionally turning the vegetables.
