- roasted pork roulade (approximately 1 kg or 2.2 pounds)
- 1 gram dried italian Fresh herbs
- 2 garlic cloves
- 200 grams Spinach
- 1 Tbsp spicy Mustard
- 2 Tbsps vegetable oil
- 1 rosemary
- 2 thyme
- salt
- freshly ground peppers
- ½ l Veal stock
Preparation steps

Drain and coarsely chop tomatoes.

Rinse spinach and blanch in boiling salted water. Shock in ice water, drain well and chop coarsely.

Peel and mince garlic, then mix with spinach and tomatoes.

Rinse pork, pat dry and roll apart. Season with salt and pepper and spread spinach mixture onto pork. Roll up and secure with kitchen twine. Season again with salt and pepper. Heat oil in a pan and sear pork on all sides. Deglaze with stock. Coat pork with mustard and herbs.

Bake in an oven preheated to 160°C (approximately 325°F) for about 1.5-2 hours. Baste with broth throughout. Remove from oven, remove kitchen twine and serve broth.
