- 2 pink Grapefruit
- 4 Tbsps olive oil
- 2 Avocados (pitted and diced)
- ½ Cucumber (diced)
- 1 red pepper (diced)
- 2 Tomatoes (diced)
- 1 onion (chopped)
- ⅔ cup pitted black olives
- 2 cups Anchovy
- 4 Basil (leaves picked)

Preparation steps
1.
Juice one grapefruit, and segment the other with a sharp knife.
2.
Prepare a French dressing by combining the grapefruit juice with olive oil, salt and pepper.
3.
Mix the avocado, cucumber, pepper, tomatoes, grapefruit, onion and olives in a bowl. Add the dressing and mix together well. Leave in a cool place, covered with cling film for 10 minutes.
4.
Divide the salad into 4 glass dishes. Add the anchovies and garnish with a basil leaves. Serve chilled.
