- 1 Eggplant (very thinly sliced)
- 2 small Zucchini (thinly sliced lengthways)
- 2 Bell pepper (seeds removedyellow and red; cut into strips)
- 1 Red onion (cut into wedges)
- 6 Tomatoes (halved or quartered if large)
- 3 Tbsps olive oil
- 2 Tbsps balsamic vinegar
- Sea salt
- freshly ground Black pepper
- 2 cloves garlic cloves (sliced)
- 4 Sirloin steak
- To garnish
- Basil

Preparation steps
1.
Heat the grill.

Put all the vegetables into a bowl.
3.
Mix together the olive oil, vinegar, salt, pepper and garlic. Pour over the vegetables and toss well to coat. Drain off the marinade and reserve.
4.
Place the vegetables in the grill pan and grill for about 10 minutes, turning once, until tender.
5.
Brush the steaks with the reserved marinade. Grill for 3-5 minutes on each side, until cooked to your liking.
6.
Cut the steaks into thick slices and place on warm serving plates with the vegetables. Garnish with basil.
