500 grams Ground beef
1 pc fresh ginger (about 5 cm)
3 scallions
100 grams Shredded coconut
3 Tbsps unsweetened Coconut milk (plus more for basting)
1 egg
2 Tbsps Coriander (crushed in a mortar)
3 Tbsps breadcrumbs
3 chili peppers (seeded and finely chopped)

2 sprigs Thai basil (leaves picked)

Preparation steps

Rinse, trim and chop the scallions. Peel the ginger and finely chop. Knead the meat with the shredded coconut and coconut milk. Mix the onion, ginger, coriander and chile (equal to 1 pepper). Mix with 1 teaspoon sugar and salt and knead again vigorously.

Then knead in the egg and 2 tablespoons breadcrumbs. Add 1-2 more tablespoons breadcrumbs if needed. Shape the meat mixture into a loaf. Scatter the remaining chopped chile pepper on the work surface and roll the meatloaf in it so that the chiles adhere to the surface of meatloaf. Place the meatloaf in a greased baking dish and sprinkle with a little salt.

Bake in an oven preheated to 200°C (approximately 375°F) for 50-60 minutes. Baste with coconut milk. Sprinkle the baked meatloaf generously with basil, cut into slices and serve immediately.
