1 stale White roll
2 onions
2 Tbsps olive oil
2 scallions
½ bunch parsley
400 grams ground pork
400 grams Ground turkey
1 egg
50 grams fine Semolina flour
salt
freshly ground peppers
4 hardboiled eggs

Preparation steps

1.

Preheat oven to 200°C (approximately 400°F).

2.

Soak bread in lukewarm water. Peel onions and chop finely. Sauté onions in olive oil until translucent and set aside. Rinse and chop scallions. Rinse parsley, shake dry, pluck leaves and finely chop.

Line a loaf tin with parchment paper. Mix soaked bread (squeezed of excess liquid) with onions, scallions, parsley, ground meat, raw egg and semolina flour. Season with salt and pepper and knead mixture well. Peel hardboiled eggs.

4.

Pour half of meat mixture into prepared pan, add hardboiled eggs then add the remaining meat mixture and smooth out.

5.

Bake meatloaf in preheated oven for 1-1.5 hours.

6.

Remove meatloaf, slice and serve hot or cold with salad on the side, if desired.
