For the meatballs
1 slice Toast (day old)
3 Tbsps Whipped cream
400 grams mixed Ground meat
1 egg
1 Tbsp finely chopped parsley
1 generous pinch Lemon peel
salt
freshly ground peppers
vegetable oil (for frying)
For the sauce
400 grams Tomatoes
1 garlic clove
2 Tbsps olive oil
1 Tbsp finely chopped Fresh herbs (such as, thyme and parsley)
salt

Preparation steps

For the meatballs, soak the bread briefly in the cream. Add the ground beef with the egg, the parsley and the lemon zest and season with salt and pepper. Knead well and divide the mixture into small balls. Fry in some oil until golden brown (5-6 minutes).

For the tomato sauce, rinse the tomatoes, remove the stalks and chop into cubes. Peel and finely chop the garlic. Sweat the garlic briefly in some oil (not too hot). Add the tomatoes and herbs and suaté for 2-3 minutes. Season with salt and transfer to plates.

Thread the meatballs on skewers and arrange on the tomato sauce.

Serve garnished to taste with fresh herbs.
