1 Lime
50 milliliters olive oil
4 pcs Halibut fillet (160 g or 5 1/2 oz each)
½ bunch thyme
8 fresh bay leaves
salt
fresh cracked peppers

1 Thyme basting brush (Thyme stalks, bundled and tied)

Preparation steps

Rinse the lime, zest and squeeze juice. Mix olive oil with lime zest and juice. Rinse fish fillets, pat dry and place in the lime marinade. Rinse thyme and bay leaves, shake dry and place on the fish. Let sit for about 1 hour. remove the fish from marinade, season with salt and pepper and grill on an oiled grill pan, 3-5 minutes per side.

During cooking, baste fish with the marinade.  Serve with your favorite salad or side dishes.
