- 2 fresh Limes
- 2 Fennel bulb
- 200 grams Strawberries
- 1 tsp White vinegar
- salt
- peppers (freshly ground)
- 1 generous pinch sugar
- 1 generous pinch Mustard
- 4 Tbsps Corn oil
- pickled ginger (thinly sliced)
- mint (for garnishing)
- Lemon balm

Preparation steps
1.
Peel limes and cut out segments, preserving all juice. Rinse and dry strawberries, hull and halve. Rinse fennel, halve and remove hard stalks, cut into thin strips. Preserve green parts for garnishing.

Combine lime juice with vinegar, sugar, mustard, oil and whisk with a wire whisk. Season with salt and pepper. Combine fennel with lime segments, let stand for a little bit. Arrange strawberries on plates. Add fennel and ginger, drizzle with dressing. Garnish with melissa leaves and mint. Serve.
