Ingredients

For the meatballs
600 grams mixed ground meat (veal and pork)
1 onion
1 bay leaf
1 egg
1 day-old White roll
2 Tbsps parsley
1 tsp Mustard
salt
freshly ground peppers
clarified butter (for cooking)
For the salad
800 grams Sweet potato
2 onions (minced)
1 Tbsp butter
6 Tbsps White vinegar
200 milliliters Vegetable broth
salt
freshly ground peppers
1 pinch sugar
4 Tbsps vegetable oil
1 Cucumber
2 Tbsps scallions

Preparation steps

1.

For the meatballs: Soak bread in warm water.

2.

Chop onion. Heat butter in a pan and sauté onion and bay leaf. Remove bay leaf and add well-squeezed bread, meat, egg, mustard and parsley. Season with salt and pepper and mix well.

Use wet hands to form patties. Heat clarified butter in a pan and cook patties until each side is golden brown, about 10 minutes.

For the salad: Heat butter in a pan and cook onions.

Boil potatoes, drain and let cool slightly, then peel and slice. Stir potatoes into onions.

6.

Whisk together hot broth, vinegar, salt, pepper and 1 pinch of sugar. Pour mixture over potatoes. 

7.

Slice cucumber and stir into salad. Drizzle with oil just before serving.

Serve meatballs with salad.
