- 1 kilogram Sweet potato
- salt
- freshly ground pepper
- 150 grams streaky, smoked Bacon
- 1 onion
- 2 Pickle
- 1 sm can Lentils (250 grams)
- 4 Tbsps vegetable oil
- 250 milliliters Beef broth
- 2 Tbsps White vinegar
- 1 tsp sharp Mustard
- 1 pinch sugar
- 1 Tbsp scallions

Preparation steps
1.
Rinse the sweet potatoes and cook in boiling salt water for 25-35 minutes. Drain, let evaporate, peel and cut into slices.
2.
Cube the bacon, peeled onion and pickles. Drain the lentils, rinse in cold water and drain well.
3.
Heat the oil in a frying pan. Add the bacon and onion. Saute until the onion is soft. Add the pickles, broth, vinegar, 2-3 tablespoons of pickle juice and season with mustard, pepper and sugar. Bring to a boil.
4.
Mix the potatoes, lentils and the marinade in a bowl. Let sit for 30 minutes.
5.
Mix well. Season with salt and pepper. Serve sprinkled with chives.
