- 12 cups Oxtail (chopped)
- 2 Tbsps vegetable oil
- 2 onions (diced)
- 1 Tbsp tomato puree
- ⅞ cup dry Red wine
- 2 cups Meat stock
- 1 Tbsp fresh thyme
- 1 bay leaf
- 4 Juniper Berry
- 12 ozs Tagliatelle
- ⅓ cup Dark chocolate (chopped)
- thyme (to garnish)

Preparation steps
1.
Season the meat with salt and ground black pepper and fry in hot oil in a roasting tin on a high heat.
2.
Add the onions, fry for a few minutes and then stir in the tomato puree and deglaze with the wine. Reduce slightly and add the stock.
3.
Braise on a medium heat for around 2 hours. After 90 minutes, add the thyme and spices and season with salt and ground black pepper.
4.
Cook the tagliatelle in salt water until al dente.
5.
Add the chocolate to the ragout, allow to melt and stir in well. Season to taste and serve on the tagliatelle garnished with thyme.
