1 tsp Cumin (finely crushed)
1 tsp ground cilantro
2 cloves garlic cloves (halved)
½ tsp paprika
½ tsp Harissa
½ lemon (zest and juice)
1 Tbsp tomato puree
1 tsp chopped rosemary
4 Tbsps olive oil
1 cup dried Apricot
5 cups lamb (e. g. shank, cubed)
2 Tbsps freshly chopped parsley

Preparation steps

Mix all the spices with the garlic, lemon juice, tomato purée, rosemary, olive oil and a little salt.

Alternating with the apricots, thread the lamb onto metal skewers (or wooden skewers soaked in water) and brush with the marinade. Cover and leave to marinate in the refrigerator for at least 2 hours.
3.
Grill for 5-6 minutes, turning. Serve sprinkled with fresh parsley, and with yoghurt and flatbread on the side.
