Preparation steps

Grease the leaf-shaped madeleine molds (or normal ramekins) with butter.

Mix the flour with the baking powder and the sugar. Melt the butter in a pot, stir in the matcha tea and honey, and allow to cool. Mix the butter-tea mixture into the flour, and stir in the eggs. Pour the mixture into the greased madeleine molds. Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for about 10 minutes.

Remove the molds from the oven, cool, release the madeleine from molds, and leave to cool on a wire rack.

Serve the madeleines as desired with a cup of matcha.
