- Ingredients
- 1 kilogram starchy potatoes
- 100 grams Spinach
- 1 garlic clove
- 40 grams butter
- salt
- 150 milliliters milk
- 100 milliliters Whipped cream
- Nutmeg (freshly grated)
Preparation steps
1.
Rinse the tomatoes and steam for 30 minutes.
2.
Rinse and trim the spinach, then thoroughly drain. Peel and finely dice the garlic. Sauté the garlic in 1 tablespoon of butter. Add the spinach, and sauté until wilted. Season with salt and remove from the heat.
3.
Peel the potatoes, dry slightly, then pass through a ricer. Add the remaining butter to the potatoes. Heat the milk and cream. Stir into the potatoes until a creamy puree has formed. Mix the spinach into the potatoes (being careful not to add too much extra liquid). Season to taste with salt and nutmeg and serve.
