250 grams Endive
250 grams Bacon
200 milliliters Whipped cream
3 Tbsps butter
salt
freshly ground peppers

Preparation steps

1.

Peel and rinse the potatoes. Cut into small pieces and cook in boiling salted water for about 20 minutes.

Rinse and dry the endive, then cut into thin strips.

3.

Finely dice the bacon until crispy, then remove half. Place the endive with the remaining bacon and sauté.

4.

Heat the cream with the butter.

5.

Drain the potatoes and let dry, then add back to the pot. Add the cream mixture, then mash with a potato masher until smooth. Add the endive and bacon, then season to taste with salt and pepper.

6.

Serve  garnished with remaining bacon.
