600 grams fresh Sardine (ready to cook)
1 onion (coarsely chopped)
1 carrot (peeled and finely diced)
Sage
1 tsp peppercorns
250 milliliters dry white wine
1 lemon (juiced and zested)
salt
250 grams pickled Bell pepper (from the jar)
1 bunch parsley (finely chopped)
2 tsps fennel seeds
125 milliliters olive oil

Preparation steps

Simmer the carrot, onion, sage and peppercorns in 250 ml of water (approximately 1 cup), the lemon juice and the wine for about 10 minutes. Season with salt, remove from the heat and add the fish. Leave to infuse for about 2 minutes, remove the sardines and allow to cool in a shallow dish.

Mix the oil with the fennel seeds and pour over the sardines. Leave to marinate for about 4 hours, stirring occasionally.

Transfer to a shallow dish and arrange the peppers decoratively over the top.

Serve garnished with lemon zest.
