800 grams mixed Mushrooms (such as oyster and chanterelle)
4 Tbsps olive oil
2 garlic cloves
2 tsps chopped thyme
4 Tbsps White vinegar
4 tsps balsamic vinegar
salt
peppers
1 bunch parsley

Preparation steps

1.

Rinse mushrooms and pat dry. Heat 2 tablespoons olive oil in a pan and saute mushrooms for about 5 minutes, stirring constantly. Remove from heat and place in a bowl. Push garlic through a press and stir into mushrooms along with all remaining ingredients. Cover and marinate for at least 4-5 hours, or overnight for best results.

Rinse parsley, shake dry and chop.  Sprinkle atop mushrooms just before serving.
